Pistachio Lassi
Fresh, sweet and refreshing a pistachio lassi is a great drink for cooling you down after a spicy curry or just a warm day. At its core, a Lassi is like an Indian smoothie or Indian milkshake. Rich and creamy, but cool and flavourful.

Instructions
In a blender blitz tablespoon the pistachios, removing 1/2 tablespoon for garnish
Add to the blender the yogurt, ice, sugar, cardamom, and milk until the mixture becomes frothy.
Pour mixture in tall glasses and top with remaining crushed pistachios.
