Pistachio Lassi

Fresh, sweet and refreshing a pistachio lassi is a great drink for cooling you down after a spicy curry or just a warm day. At its core, a Lassi is like an Indian smoothie or Indian milkshake. Rich and creamy, but cool and flavourful.

Having a spicy meal, or is it a really hot day? Forget sugary soda and calorific beer (although both are tasty). Switch it up with this sweet and fresh inspired by India pistachio lassi.

When is it time to drink a Lassi? Well anytime, but as a plain Lassi is yogurt mixed water the result is going to be a cooling drink that does wonders if you are in hot weather or just had a spicy dish that a Lassi could be the drink you are looking for. 

I wanted a Lassi that is cooling, but also something that has some sweetness that allows it to almost be a light dessert drink. In this case, I’ve added pistachios and some sparkling water. Blitzing the yogurt with ice gives you cold concoction. Mix with the sparkling water for a frothy drink, topped with some beautiful pistachios. 

Ingredients

  • Ice
  • Plain yogurt
  • Pistachios
  • White sugar
  • Milk
  • Ground Cardamom

Instructions

  1. In a blender blitz tablespoon the pistachios, removing 1/2 tablespoon for garnish
  2. Add to the blender the yogurt, ice, sugar, cardamom, and milk until the mixture becomes frothy. 
  3. Pour mixture in tall glasses and top with remaining crushed pistachios.

Tips and Variations

How to make a plain lassi

If you aren’t keen on pistachio, leave these out to make a plain lassi. I personally would leave in the cardamom, but you can also omit for a cool yogurt drink.

Make a sparkling lassi

Change half the milk for sparkling water. Add this at the end (not in the blender!)

Can I make this lassi vegan?

After some research at Active Vegetarian, I believe you can make this lassi vegan. Use a vegan yogurt, and change the milk for either water or a non-dairy alternative. To make it a pistachio lassi, I would recommend you still stick with a plain flavour of vegan yogurt. Check out this list from PETA for some ideas of branded vegan yogurt.

  1. I’ve heard of a Lassi before. Indeed I do have a recipe in one of my Indian cookbooks, but I’ve never made it or tried it before Matt. It always looked complicated. This one you’ve made, looks much easier. Must give this a try one day. Thanks!

  2. The timing on this one is perfect, Matt! We had an unusually warm day here yesterday, and the thought of a cold lassi sounds awesome. Laura is also obsessed with all things pistachio, so I might have to make this as a surprise for her…and me. 🙂
