All those weeks and months of planning, bulk baking/freezing, keeping eyes out for the sales, planning, and replanning your menu are all about to pay off. That’s right, Christmas is nearly here.

I’m not joking when I say that I planned my menu for the whole Christmas week over a month in advance. Firstly to make sure I’ve got my vegetables as fresh as can be. Secondly, like every sane individual, I want to avoid the pandemonium that is grocery shopping in the days before Christmas.

This year I’m cooking Christmas dinner for my in-laws. Being that I’m the only one sitting at the table not from Britain, I feel the need to bring both elements of British and Canadian Christmas traditions to the table.

I’ve planned some aspects of Christmas which are very British (pigs in blankets are a British classic), but I have taken the opportunity to bring some Nova Scotian ideas over here. Namely, I have a bunch of Nova Scotian wine and chutneys from the summer. Alas, I am still endeavoring to make as much from scratch that I can.

Probably the best thing people can make at Christmas is cranberry sauce. My homemade cranberry sauce recipe is very easy. You can make it in advance and there is a noticeable difference between the jarred stuff and the fresh stuff.

My cranberry sauce with orange and thyme makes use of herbs and sherry to add a lovely flavor to complement the turkey. Start with some fresh cranberries, and pair them with some orange juice, thyme, and sherry. A few minutes of the stove, and voila! You’ve got some delicious Cranberry sauce with orange and thyme.

This easy cranberry sauce with orange juice and thyme will proudly be on my Christmas table. Plus it is cheap to make and can be frozen if need be. Plus I’m intending to use the leftovers in some homemade cranberry sauce sausage rolls!

Pairings

Drinks: Well, some good red wine.

Music: Holiday music, obviously!

Easy cranberry sauce with orange juice and thyme

Thyme and Orange Cranberry Sauce

Ingredients
  

  • 200 g fresh cranberries
  • 80 ml of fresh orange juice
  • 2 teaspoon Orange zest
  • 80 g of sugar
  • Bunch of thyme
  • 1 tablespoon Sherry

Instructions
 

  • Mix the sugar and the juice in a pot, and place on a low heat until the sugar dissolves
  • Add the cranberries, zest, sherry and thyme. Bring to a quick boil and then reduce heat to let simmer. The berries will eventually 'pop' releasing their juice.
  • After about 10min, take off the heat and cool. The sauce will thicken as it cools. Store in a covered container, then unveil to wow your family.

    Planning the entire menu one month in advance? That’s impressive, Matt! I wish I could do the same, but this doesn’t really work with my mind. For instance, I woke up today with an idea to add one appetizer to our New Year’s Eve celebration, and of course we don’t have some of the required ingredients at home. Old same, old same. I do love this cranberry sauce with thyme and a touch of Sherry. Happy New Year!
