There are few foods more difficult to resist than a proper crispy chicken sandwich.
Not the sort that arrives wrapped in paper after a drive-thru queue, but one built at home: crunchy coating, juicy chicken, a soft bun, and enough lettuce and pickle to convince yourself you’re making sensible decisions.
This healthy chicken sandwich recipe has been a regular at our table for years. The chicken is marinated in Greek yogurt, coated in crushed cornflakes, then baked until golden and crisp. It delivers much of what people love about fried chicken, but with less oil, less fuss, and no deep fryer required.
Calling something “healthy” can sometimes be code for disappointment. Fortunately, this sandwich never got that memo.

The Sandwich That Started With a Quiet Morning
Every parent knows there are different kinds of luxury.
Some people think it’s expensive holidays or sports cars. I increasingly think it’s drinking a hot coffee while nobody asks where their shoes are.
Years ago, I found myself with one of those unexpectedly quiet mornings. The children were occupied elsewhere, the house was calm, and I wandered around the grocery store at a pace normally associated with retired gentlemen comparing apples.
The only plan was supper.
My husband David has always had a fairly straightforward relationship with food. If chicken is involved, he’s generally in favour of the idea. So rather than grilling a few chicken breasts and calling it done, I started wondering whether it was possible to make a genuinely crisp chicken sandwich without dealing with several litres of hot oil.
The answer turned out to be cornflakes.
Breadcrumbs always seemed to produce respectable results. Cornflakes produce the sort of crunch that makes people look up from their plates.
The yogurt marinade keeps the chicken tender, the coating turns golden in the oven, and the whole thing lands somewhere between a takeaway treat and a proper homemade supper.
Which is a useful place for a sandwich to find itself.
Ingredients
For the Chicken
- 6 boneless skinless chicken breasts
- 1 cup Greek yogurt
- Zest and juice of 1 lemon
- 2 tablespoon garlic powder
- 1 teaspoon smoked paprika
- 2 teaspoon salt
For the Coating
- 3 cups crushed cornflakes
- 3 tablespoon whole wheat flour
- 1 tablespoon fresh thyme, chopped
- Pinch of salt
Optional Finishing Glaze
- 6 tablespoon butter, melted
- 2 tablespoon maple syrup
- Remaining paprika and garlic powder
To Serve
- Soft burger buns
- Lettuce
- Tomato
- Red onion
- Pickles
- Mayo or garlic aioli
- Bacon, if you’re feeling ambitious
Method
- Place the chicken in a large bowl or zip-top bag. Add the yogurt, lemon juice and zest, garlic powder, paprika, and salt. Mix well and refrigerate for at least one hour or overnight.
- Heat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Combine the crushed cornflakes, flour, thyme, and salt in a shallow bowl.
- Remove the chicken from the marinade and press each piece firmly into the coating until well covered.
- Arrange on the baking sheet, leaving space between each piece.
- Bake for 25 minutes. Turn and continue cooking for another 15 minutes, or until cooked through.
- If using the glaze, brush over the chicken during the final 15 minutes of cooking.
- Toast the buns and build your sandwiches with your preferred toppings.
What Makes This a Healthier Crispy Chicken Sandwich
This isn’t a diet recipe, and it’s not trying to be.
The difference is simply that the chicken is baked rather than deep-fried. The Greek yogurt marinade adds flavour and tenderness without requiring a heavy batter, while the cornflake coating delivers the sort of crunch most people are actually looking for.
You still end up with a proper crispy chicken sandwich. There just happens to be less oil involved along the way.
Which feels like a reasonable compromise when you’re reaching for a second one.
Tips for an Extra Crispy Chicken Sandwich
Don’t crush the cornflakes too finely
You want small flakes rather than crumbs. The uneven pieces create much of the crunch.
Give the chicken room
Crowded trays steam. Space creates crispness.
Marinate overnight if possible
The difference in texture is noticeable.
Air Fryer Method
Cook at 375°F for approximately 15–18 minutes, turning halfway through, until the chicken reaches 165°F internally.
What Else Works Here
A little cayenne in the coating gives the chicken some warmth without overwhelming it.
Swap the thyme for rosemary if you’re serving this in autumn.
Pickled jalapeños work particularly well alongside the lemon and yogurt marinade.
For a lighter lunch, skip the bun altogether and serve the chicken over a crisp salad with a lemony dressing.
What To Serve With It
This is the sort of sandwich that likes company.
Serve it with vinegar slaw, dill potato salad, corn on the cob, or a pile of oven chips. On a warm evening, blueberry lemonade feels entirely appropriate. On a cooler one, a cold pilsner rarely causes complaints.
Storage and Make-Ahead
The chicken can be marinated up to 24 hours ahead.
Cooked chicken will keep in the refrigerator for up to three days and reheats surprisingly well in an air fryer.
The coated uncooked chicken can also be frozen on a tray before being transferred to a freezer bag for future suppers.

Ingredients
- 6 Boneless chicken breasts skinless
- 1 cup Greek yogurt

- 2 1/4 tablespoon Garlic powder
- 2 teaspoon Salt
- 3 cups Crushed corn flakes
- 3 tablespoon Whole wheat flour
- 1 tablespoon Chopped fresh thyme
- 6 tablespoons Unsalted butter Optional
- 2 tablespoons Maple syrup Optional
Instructions
Healthy Crispy Chicken Breast
- Add the chicken to a gallon size zip top bag. Pour the yogurt, salt, lemon juice and zest, 2 tablespoons garlic powder and ½ teaspoon paprika over the chicken. Toss well, cover and refrigerate 60 minutes or overnight.
- Preheat the oven to 350degrees Fahrenheit. Line a baking sheet with parchment.
- Add the crushed corn flake, flour, thyme, and a pinch of salt to a clean bowl. Stir to combine.
- Remove each piece of chicken from the yoghurt, and dredge through the crumbs. Gently press to ensure the mix sticks! Place on the prepared baking sheet. Repeat until all the chicken has been used. If you are going to freeze, do this now and then bag. Make sure not to crowd your pan, if necessary use two baking sheets. Transfer to the oven and bake for 25 minutes, then flip the chicken over and continue cooking another 15 minutes or until the chicken is cooked through. If using thighs, you may need to cook the chicken a little longer.
Optional cripyness step (Not as healthy steps)
- If you want it to taste a treat, make the hot butter for the last 15 minutes. Melt together the butter, maple syrup, and the rest of the paprika and garlic powder with a pinch of salt.
- Brush the chicken generously with hot butter and return to the oven for those final 15 minutes.
- Make your sandwich with a good butter bun, mayo (or Greek yogurt spread), bacon, tomato, red onion and lettuce. Enjoy!

Matt, I’m sitting in front of my computer at 11:50 catching up on reading my favorite blogs, when I pop to your site and see that amazing looking chicken sandwich and my stomach rumbles with delight telling me it’s lunchtime. I love the marination with greek yogurt (we don’t get US-style buttermilk here) and the hot smoked paprika must give it a nice zing. I can see why “D” was happy.
Going to the market early is a joy, but I never thought of sipping on a coffee while strolling down the isles. I must try this. Well, now it’s time for my bowl of lunch soup, but I’m going to be thinking about your chicken sandwich.

This is one of the best recipe I’ve ever tasted using real ingredients plus my children (who are very picky) love it! I’ve tried so many recipes using breadcrumbs or using eggs and they never tasted as good as this. The best part was the crunch but I used a Publix brand corn flakes which I think may not be as good as the real corn flakes which I’ll try next time. Thanks for a healthy, slam dunk recipe!!!
