An easy to make mock hollandaise sauce recipe, that is full of flavour and can be made in mere minutes. The keto friendly mock hollandaise sauce is perfect on eggs, veggies and even steak.

One of the things I love about weekends is getting to make breakfast for my family. During the week, I’m usually out the door as they are waking up, so it isn’t a family affair. On the weekend, however, things are more relaxed and we can sit around the table a bit longer. Well, as long as little people’s attention can bare to sit at the table!

My oldest and I love eggs benedict, and if we ever go out for breakfast it what we are likely to order. He is great, as he will try anything at least once to see how he likes it. Plus, he is very adept at cracking eggs! One morning, he asked if we could have eggs benedict for breakfast. This posed a problem, as I A: didn’t have butter and B: didn’t want to make a ton of sauce for only two people.

I remembered many years ago stumbling across a recipe for a mock hollandaise sauce, which used cheddar and mayo. For a life of me, I cannot remember where I read this, and I have searched and searched (sidenote: if you know where I might have found this, let me know so I can give credit!). In any case, I came up with my version.

First, over a double boiler, I added 100 grams of grated medium cheddar plus 100g of mayonnaise. Slowly the heat from the double boiler will melt the cheddar and the mayo into a lovely sauce. From there I added a bit of Dijon mustard for extra flavour, a small splash of maple syrup for a just a hint of sweetness and then some white wine vinegar to help thin out the sauce and give just a bit of tang.

The result was lip-smacking good, and both Thing 1 and I gladly gobbled it down on our eggs. Also, because this mock hollandaise sauce has no eggs you can still enjoy it if you have an egg allergy. However, do ensure you use a vegan mayo or egg-free mayo when making to ensure it stays egg-free. Simple Vegan Blog has a good recipe for an egg-free mayo if you need one.

Is this mock hollandaise sauce keto friendly?

I’m not an expert here, but I’m informed that this mock hollandaise sauce is very keto friendly. Just don’t add the maple syrup to reduce the carbs.

What can you use mock hollandaise sauce on?

So many combinations are delicious. The classic eggs benedict has a poached egg with ham on an English muffin. It is also good with spinach (Eggs Royale) or Asparagus. If you want to be fancy, put a poached egg on some well-marinated steak for steak and eggs and pour the mock hollandaise sauce over top. It is amazing.

What can you add to hollandaise sauce

It is so fun to experiment in the kitchen, and you can easily do so with this mock hollandaise sauce recipe. For some hollandaise sauce variations, you could add some fresh cracked black pepper for an added perk. For the more adventurous, I’d stir in a teaspoon of chipotle pepper paste for more of a tex-mex feel. If you want more of a French feel, some chopped tarragon and bit of lemon juice makes a beautiful sauce for a rich fish like salmon.

Mock Hollandaise Sauce Recipe

Ingredients
  

  • 100 grams Mayonnaise Switch to egg-free or vegan mayo if you have an egg intolerance
  • 100 grams Medium cheddar grated
  • 1 1/2 teaspoon Dijon mustard
  • 1 teaspoon Maple syrup
  • 2 teaspoon White wine vinegar
  • 1/4 teaspoon Paprika

Instructions
 

  • Create a double boiler by placing a heatproof bowl over a pot of simmering water. To make your sauce, add in the mayo, medium cheddar, dijon mustard and paprika. Using a balloon whisk, slowly stir the ingredients together.
  • As the heat melts the cheese, keep whisking until there are no lumps and you have a smooth sauce. Then add the white wine vinegar, 1 teaspoon at a time. You want to make sure the sauce is smooth and slightly runny, but try as you add as the vinegar will change the taste profile. Take this off the heat (don’t toss the water!!) and cover and wrap in a clean towel to keep warm.

  4. I love love love weekend breakfasts and brunch! I have an easy hollandaise sauce I normally make, but I’m allergic to egg yolks so it upsets my tummy (doesn’t stop me from eating it. Lol).
