If you’ve never had a chip butty, it’s one of Britain’s most beloved comfort foods. At its simplest, a chip butty is a sandwich filled with hot chips (French fries) and buttered bread. This version adds a spicy harissa mayo, turning a traditional chip butty recipe into something a little more grown-up.

A while back when Thing 1 and 2 had recently moved in, I found myself nearly falling asleep in the aisles of my local grocery store at around 8 pm. Yes, I’m was pretty well wiped. From work to family life, to trying to find time to actually get to the gym to lose some much-needed weight, to planning my Christmas week menu. My brain went into shutdown mode right near the freezer section.

Now let’s be honest, if you have kids and any sort of life, you’ve been right where I am! It’s not hopelessness, it’s needing to have an evening out or a kid-free morning to just switch off.

As I walked back from the shop, the winter air did wonders to wake me up, and my mind started reminiscing about what I made for food the last time I felt like this. A chip butty. Not just any butty, but the adult version. One with a garlicky Harrisa mayo sauce. Honestly, while it might be pure carbs it is also just so simple that it is wonderful.

What is a Chip Butty

Butty is English slang for a sandwich. So, you might hear an English person refer to a bacon butty, which is essentially a bacon sandwich (also delicious). If you don’t know, a ‘classic’ chip butty is essentially hot French fries served between buttered white bread. See, simple. It is also beloved by most Brits if they go to a football match. OK, kids mainly, but why should they have all the carby fun?

While Burger King has introduced their own version of a chip butty, or French fry sandwich, I assure you this homemade version is much (MUCH) better.

As I don’t own a deep fryer, I opted for some good’ol McCain’s oven chips. But to really kick it up a gear, I made a brilliant little sauce using mayo, harissa paste, garlic and just a bit of lemon juice. The result is this spicy savoury sauce, that just make your taste buds sing.

So having slightly woken up on the walk back from the shop, it took only 20 min to start enjoying this great sandwich and a cold beer.

Yes, I was (and am) still tired, but boy did that sandwich hit the spot!

  • Frozen oven fries
  • Mayonnaise
  • Harissa paste
  • Garlic powder
  • Lemon juice
  • Soft bread or rolls
  • Pickles (optional)

How to make a Chip Butty

  1. Cook the fries to the package instructions
  2. In a small bowl, place the mayo, harissa, garlic and lemon juice. Mix until combined. It should be a bit loose (about the consistency of ketchup, maybe a bit looser).
  3. Place hot fries onto the white bread, drizzle over with the harissa mayo. If adding pickles or onions, do this now. Eat hot!

Variations

  • Classic chip butty. Take hot fries, place it onto slices of buttered bread.
  • For a Curry Chip butty. Mix ½ cup mayo with 1 tablespoon of medium or hot curry powder. Stir, and add 1 teaspoon of white wine vinegar to loosen up the mayo. Place the hot fries onto slices of bread with the curry mayo. Alternatively, use a fresh naan or roti instead of bread.
  • Fully Loaded Chip Butty. I love this option, make the harissa mayo, and top the chips with some red onion and pickle slices. 

What to Serve with a Chip Butty

A chip butty is usually treated as a meal in its own right, especially after a football match, a long day at work, or a late-night pub visit. That said, there are a few things that pair particularly well with it.

A cold lager or bitter is probably the traditional choice, although a crisp cider works beautifully too. If you’re avoiding alcohol, a strong cup of tea is surprisingly common alongside a chip butty in many parts of Britain.

For something more substantial, serve it with:

  • Pickled onions
  • Pickled eggs
  • Mushy peas
  • Curry sauce for dipping
  • Coleslaw
  • A simple green salad

Personally, I’m happiest with a chip butty, a cold beer, and absolutely no judgement from anyone nearby.

Ingredients
  

  • 500 g oven chips (or fried if you like)
  • 1/2 cup good quality mayo
  • 1 tablespoon hot harrisa paste
  • 1 teaspoon garlic powder
  • pinch sea salt
  • 1 teaspoon chopped flat leaf parsley
  • juice of half a lemon
  • 8 slices soft bread
  • Butter

Instructions
 

  • Cook the french fries/chips based on the directions on the bag. In the meantime, combine all the sauce ingredients in a small bowl. 
  • Spread the butter on one side of the bread, top with hot chips and then a good dose of a sauce followed by another slice of bread. Devour with a cold drink.

  1. Your comments totally hit home, Matt. I was hoping to catch up on sleep during the holidays, but that didn’t really happen. And now we’re back up and running into January. As much as I miss my sleep, all of the funny things Robbie does makes up for it! As far as this recipe, I must admit that I’ve never heard of a chip butty…but it sounds fantastic! Pittsburgh is known for putting fries on sandwiches, but this takes that to a whole new level if you ask me. I need to put this on the menu ASAP. Talk about perfect football food!

  3. nothing more comforting than a chip buttie! i was just reading about the spelling – apparently there are lots of arguments about ‘butty’ or ‘buttie’. we always spelt it ‘buttie’. Just as there are arguments about using ‘spelt’ or ‘spelled’. what a grammatical quicksand we live in:-) anyway, love this version of the classic. cheers sherry

  6. There was a time, long ago, when I would have thought a sandwich full of fries was ridiculous and/or indulgent. But I’ve since seen the error in my ways, and I’ve been pleasantly surprised to see just how many variations on this theme there are out there in the world (the California burrito, for example). Carby fun indeed! I have to say that I love the punch of spice you’ve worked into this recipe. Potatoes are such a perfect base for spice, and harissa is a great choice. Cheers!
